Hashimoto’s Disease: My Story With Tools and Resources

Hashimoto’s disease is a condition in which your immune system attacks your thyroid causing damage to healthy tissue and preventing it from producing adequate hormones. According to NIH.gov, “Thyroid hormones control how your body uses energy, so they affect nearly every organ in your body. Without enough thyroid hormones, many of your body’s functions slow down.” As a result, symptoms include things like tiredness, sluggishness, brain fog, weight gain, and depression.

Everyone’s experience with Hashimoto’s disease, and autoimmune diseases in general, varies, but sharing information can often help connect the dots. The info here is representative of my own experience and includes things like my history and health plan, as well as recipes and resources. The hope is that it can help others on their own pathway to health.

I was diagnosed with Hashimoto’s disease when I was 15 and until recently, my symptoms were easy enough to ignore, or at least live with. Then a nodule appeared on my thyroid. Here I break down a lot of the symptoms I ignored that were precursors to the nodule and what I’ve learned along the way.

Most Hashimoto’s diets cut out gluten, dairy, and soy at a minimum. These recipes adhere to that but my overall aim is to make well-rounded meals that incorporate diverse ingredients. These are some of my favorites.
